You can either cook this soup in a crock pot or on your stove top.
What you need:
6 Large potatoes, Peeled and chopped in small cubes
1 Large onion Chopped
1 quart Chicken broth (32oz)
3 garlic cloves minced
1/4 cup butter
2 1/2 tsp salt
1 tsp pepper
1 cup cream
1 cup Cheddar cheese shredded
3 TBS of chopped fresh chives
1 cup sour cream (optional)
8 strips of bacon fried and crumbled (optional)
Extra cheese for sprinkling (optional)
Combine first Seven ingredients in crock pot or large pot. If using a crockpot cook on high for 4 hours or low for 8 hours. If using stove top cook on Med-Low heat for about 1 1/2 to 2 hours or until potatoes are very tender.
Mash soup until potatoes are coarse and soup is thickened. Stir in 1 cup of cream, 1 cup shredded cheese, and 3 TBS of chives
Place in bowls, if using top with sour cream, bacon and cheese.
Enjoy with bread! Makes about 6 servings.
